Corn Soup

INGREDIENTS:

4 cups fresh corn Kernel or 2 cups cream style corn

1 cup chicken stock

2 tbsp. margarine

½ cup chopped green onion or chive

½ tbsp. minced garlic

3 tbsp. chopped sweet pepper

4 cups milk

1 tsp. salt

½ tsp. white pepper hot pepper to taste strips of toast chopped parsley


METHOD / DIRECTIONS:

Combine corn and stock in an electric blender and puree.
Melt margarine, cook onion, garlic and sweet pepper for a minute: add corn puree and simmer for 15 minutes over low heat.
Add milk, salt and pepper and continue to cook for 10 minutes.
Garnish with toast and chopped parsley.
